Easy Chocolate Cake with Olive Oil in One Pan

You know those fancy desserts that require five bowls, a mixer, and your will to live?
This isn’t that.

It’s one pan. Olive oil instead of butter.
A splash of balsamic—cherry or blackberry if you’re feeling bold—gives it that deep, rich flavor that makes people think you tried harder than you did.

Top it with powdered sugar, grab a cup of coffee, and call it a day.
It’s not showy. It’s just quietly delicious.

Ingredients

  • 1 1/2 cup flour
  • 1 cup sugar
  • 2 tablespoons Dutch processed cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup Blood Orange EVOO
  • 1 tablespoon Vanilla
  • 1 tablespoon Balsamic Vinegar (Cherry, or Blackberry)
  • 1 cup water OR red wine

 Directions

  1. Pre-heat oven to 350 degrees.
  2. Mix directly in an 8x8 pan with a small whisk to reach into the corners.
  3. Bake for 35 minutes.
  4. Serve with a dollop of whipped cream or powdered sugar!
