I grew up near a peach orchard, so I've loved peaches for as long as I can remember. As a kid, I ate them just the way they came. Nobody was putting peaches in salads back then. Years later, after opening Olive & Basket, I started trying recipes that paired fresh fruit with olive oil and vinegar.

Sweet peaches, peppery arugula, blue cheese, and a simple homemade vinaigrette. Summer doesn't get much better than this.

1 (5-ounce) container arugula
1/4 cup thinly sliced red onion
1/4 cup chopped roasted and salted almonds
1 large peach, sliced into wedges
1/3 cup crumbled blue cheese
Salad Dressing
2 tablespoons Tahitian Lime Olive Oil
2 tablespoons Peach White Balsamic Vinegar
1 clove garlic, finely chopped
1 teaspoon Dijon mustard
1 teaspoon pure honey
Whisk together oil, vinegar, garlic, mustard, and honey in a bowl. Season with salt and pepper.
In a large bowl, add arugula, onion, almonds, peaches, and blue cheese.
Drizzle dressing on salad and toss to combine. Serve immediately.
Skip the mustard and honey in the dressing if you want an even simpler dressing.
