Sometimes the best way to eat more 🥗 salad is to think outside the salad plate. We find this to be particularly true with Caprese, the much-loved salad layered with a trio of ripe tomatoes, creamy mozzarella, and fresh basil.

When you need a quick solution to beat dinner fatigue, give your chicken breast a seasonal boost with a topping of layered Caprese. Once cooked, drape the chicken with a slice of fresh mozzarella and stick it under the broiler for just a minute or two until it’s melted.
