Sometimes the best way to eat more š„ salad is to think outside the salad plate. We find this to be particularly true with Caprese, the much-loved salad layered with a trio of ripe tomatoes, creamy mozzarella, and fresh basil.
To make sure you get your fill this summer, here are five more ways to eat Caprese (sans salad plate).

Caprese on a chicken breast.
When you need a quick solution to beat dinner fatigue, give your chicken breast a seasonal boost with a topping of layered Caprese. Once cooked, drape the chicken with a slice of fresh mozzarella and stick it under the broiler for just a minute or two until itās melted. Just before serving, top with a slice of juicy tomato and fresh basil.

Let Caprese give your baked ziti a boost. Swap out some of the tomato sauce for fresh diced tomatoes. Trade the shredded cheese for chunks of fresh mozzarella and be sure to fold in plenty of fresh basil leaves with the noodles.
