For all the salmon lovers out there, we've got a brand-new recipe that's sure to make your mouth water. This baked salmon topped with fresh avocado salad is simple and delicious, and it takes minimal effort!

Baked salmon topped with a fresh avocado salad? We're in!
1 ½ to 2 lbs. Salmon filet
1 Tbsp. Olive & Basket Lime Olive Oil
1 Lime
2 Tbsp. Olive & Basket Tasty Taco Seasoning
2 Avocados, slightly firm, diced
1 Jalapeno, seeded and diced
1 Lime
1 Tbsp. Olive & Basket Lime Olive Oil
¼ cup Cilantro, chopped
1 cup Corn, cooked
2 Garlic cloves, minced
1 ½ cup Cherry tomatoes, halved
Salt and Pepper for taste
Preheat oven 375 degrees
On a large sheet of foil, place salmon. Drizzle olive oil and sprinkle Taco seasoning on salmon. Squeeze lime over salmon. Fold edges of foil together to wrap salmon. (if you would like to create individual portions, cut salmon into 4 servings and use 4 pieces of foil)
Add all avocado salad ingredients together in a large bowl. Stir well and set aside.
Place salmon in oven and bake for 12 minutes. Watch Salmon closely as to not overcook salmon. The salmon should be opaque and flakey—not dry.
Remove salmon from oven. Place salmon on a platter. Open foil and top salmon with salad. Serve with lime wedges. Enjoy!
