This soup brings a zesty twist to a classic favorite. Using a rotisserie chicken not only saves time but also adds depth to the flavor. Let's get cooking and bring a burst of citrusy sunshine to your table!
2 tablespoons Meyer Lemon Olive Oil plus extra for finishing
1 medium onion, chopped
2 - 3 medium peeled carrots, chopped into bite size pieces
2 celery ribs, cut into half moons
2 cloves garlic, chopped
8 cups chicken stock
4 cups shredded rotisserie chicken
2 cups cooked egg noodles
fresh chopped herbs for garnish
salt and pepper to taste
Place a large pot over medium heat and heat olive oil. Add the onion. Cook for 5 minutes or until onions are fragrant and translucent.
Add in garlic, carrots, and celery and allow to cook for 5-6 minutes or until the vegetables are softened (but not browned).
Pour in the chicken stock and season with salt and pepper. Bring everything to a boil and then reduce down to a simmer.
Add in shredded chicken and continue to simmer for another ten minutes.
Cook noodles according to the package.
You can add the cooked noodles right to the pot before serving.
Divide soup into 4 or 6 soup bowls. Garnish with fresh herbs and a drizzle of olive oil before serving.
