Say no to boring summer zucchini!

When someone offers me zucchini from their garden, I can't refuse. Often, it sits on my kitchen counter and I don't know what to do with it.
Here's an excellent solution. Zucchini is no longer boring! You can enjoy this salad as a light lunch or a side dish with your summer dinner.
1 pound Small to medium yellow and green zucchini, sliced thinly
Coarse Salt (Try our Smoky Citrus Salt)
3 Tbsps. Marc de Champagne Vinegar
3 Tbsps. Garlic Extra Virgin Olive Oil
1 to 2 Tbsps. Fresh Herbs, chopped (dill, parsley, mint, etc.)
Salt and pepper for taste
Slice zucchini thinly. Sprinkle with salt and let sit for 20 to 30 minutes.
Rinse zucchini and dry with paper towel.
Combine oil and vinegar in a bowl or mason jar. Add zucchini and toss to make sure zucchini is coated with mixture. Season with salt and pepper.
Refrigerate for 5 to 6 hours.
Remove from refrigerator and add fresh chopped herbs. Taste and season again if needed.
Serve on a platter and garnish with fresh herbs. Enjoy!
