Preheat oven to 350 degrees. Slice the baguette and brush with olive oil.
Place bread on sheet pan and place in oven. Toast until bread is lightly toasted and a golden color.
Place feta in a bowl and mashed with a fork. Add a little olive oil and whip with a fork or whisk until smooth. (you can also do this in a food processor)
Combine onion, tomato and cucumbers in a large bowl.
Prepare the vinaigrette by combining all the ingredients. Whisk until combined. Pour over the onion, cucumber, and tomatoes.
Assemble the bruschetta
Spread the whipped feta on the toasted bread.
Spoon the topping (cucumber, tomato, and onions) over the feta.
