If you’re making a salad this Mother’s Day—or just trying to eat something green this spring—this one’s a good one.
Strawberries, avocado, and a little lime-strawberry vinaigrette. It’s simple, not fussy, and tastes like you put in more effort than you actually did.
Salad

4 cups arugula
4 cups spinach
2 cups strawberries, washed and sliced
2 avocados, sliced
½ cup thinly sliced red onion
½ cup toasted chopped pecans
½ cup Tahitian Lime Olive Oil
½ cup Strawberry White Balsamic Vinegar
salt and pepper to taste
Prepare the dressing by whisking the olive oil and vinegar, salt, and pepper in a bowl.
Combine the arugula, spinach, strawberry, avocado, red onion, pecans in a large bowl. Drizzle with dressing.
Serve immediately.
