It’s the perfect salad for Easter brunch, Mother’s Day, or really any day you want something that feels fancy without requiring actual effort. Give it a try—you’ll be hooked.

Salad

6 cups Spring mix
2 cups cherry tomatoes, halved
2 cups English cucumber, diced
1 small red onion, sliced
3 to 4 ounces smoked salmon, torn into pieces
½ cup feta cheese, crumbled
1 tablespoon sunflower seeds
¼ cup Meyer Lemon Olive Oil
3 tablespoons Marc de Champagne Vinegar
1 tablespoon prepared horseradish
1 tablespoon Dijon mustard
1 tablespoon sugar (adjust to taste, depending on the horseradish strength)
salt and pepper to taste
Add all the salad ingredients to a large salad bowl or platter.
Whisk dressing ingredients in a small bowl.
Drizzle dressing over salad, toss, and serve. Enjoy
