This salad tastes like summer got dressed up.
It’s juicy, sweet, and just the right amount of tangy.
Pairs well with sunshine, grilled things, and a second helping.

4 medium peaches, pitted and sliced
1 1/3 cup strawberries, topped and halved
1 cup cherry tomatoes, halved
2 medium avocado, pitted, peeled, and sliced
1 large English cucumber, sliced
1 cup cherry tomatoes, halved
8 oz. mozzarella pearls
2 tbsp fresh mint, chopped
2 tbsp fresh basil, chopped
¼ cup Basil Extra Virgin Olive Olive
¼ cup Strawberry Peach White Balsamic Vinegar
Salt and Pepper to taste
Layer the fruit and vegetables in this salad on a large platter starting with the cucumber and avocado. I like to arrange the peach slices, strawberries, and tomatoes on top, then finish with mozzarella, mint, and basil.
Whisk the oil and vinegar together. Drizzle over salad but do not over dress the salad. Serve immediately, cold.
