Here’s my go-to vinaigrette.
It’s quick, easy, and once you start making your own, that bottle of store-bought dressing may sit in the refrigerator a little longer.
Use it on salads, vegetables, grain bowls, or whatever needs a little something extra.

It’s quick, easy, and once you start making your own, that bottle of store-bought dressing may sit in the refrigerator a little longer.

½ cup extra-virgin olive oil
3 tablespoons vinegar of choice (balsamic vinegar, red wine vinegar, white wine vinegar)
1 tablespoon Dijon mustard
1 tablespoon honey
2 medium cloves garlic, pressed or minced
¼ teaspoon fine sea salt, to taste
Freshly ground black pepper, to taste
In a liquid measuring cup, mason jar, or bowl, combine all of the ingredients. Stir well with a small whisk or a fork until the ingredients are completely mixed together.
Taste and adjust as needed. If it’s too acidic, add a little more olive oil. If it’s too sweet, add more olive oil to balance it out. If the flavor seems a little flat, add another pinch or two of salt. If it needs more zing, add vinegar a teaspoon at a time.
Serve immediately, or cover and refrigerate for later. Homemade vinaigrette will keep well for 7 to 10 days. If the olive oil solidifies in the refrigerator, that’s completely normal. Simply let the vinaigrette sit at room temperature for a few minutes, then whisk or shake well before serving.
