Tips For Cooking Your Pasta Right For Pasta Night

If you’re travel obsessed like me, it can be very difficult when we can’t travel. Always dreaming of that next destination but it’s just out of reach due to COVID.

One way we can do this is to travel through food!  Over the next couple of weeks, I am sharing Italian recipes that will allow us to travel through our taste buds!  But first things first--

Tips For Cooking Pasta Right For Your Next Pasta Night

🍝Make sure your pot is large so your pasta can be free! And use plenty of water.

🍝Don’t put oil in your water.  It will make your pasta greasy and slippery—and your beautiful pasta sauce will not stick.

🍝Salt your water like the ocean!  The water needs to “taste like the sea”.

🍝Before adding your pasta, make sure your water is at a rapid boil.  If not, say hello to soggy 😢 pasta.

🍝Add your pasta to the pot and immediately stir to prevent your pasta from sticking together.  We all have had that giant clump of pasta at one time or another—don’t deny it…

🍝 Save that water!  Ladle a cup of pasta water into a bowl before you drain your pasta.  Add a portion to your sauce, your noodles will thank you!

🍝Add your pasta (along with a bit of your pasta water) to the sauce not the other way around.

I’ve been told by a chef not to add salt till the water is at a rapid boil and be judicious of the amount.
Adding pasta water to the sauce is new to me. In my family we added grated cheese to the sauce as it simmered. And we always ladled sauce into bowl/plate and then added the pasta.
