A wonderful way to use our Basil Olive Oil and Peach White Balsamic Vinegar...and celebrate summer!
2 to 3 Peaches, firm but ripe
3 Tbsps. Basil Extra Virgin Olive Oil, divided
2 Tbsps. Peach White Balsamic Vinegar
4 oz. Burrata, torn in small pieces
2-3 oz. Prosciutto, torn into pieces
Basil leaves, torn in small pieces
Salt and Pepper to taste
Heat Grill to medium/high heat.
Cut peaches in half. Remove stone. Brush flat side with olive oil.
Place flat side of peaches on grill. Grill for 2-4 minutes until slightly charred with grill marks. Remove peaches from heat and slice into wedges.
On a large plate or platter assemble salad. Arrange peaches, burrata, and prosciutto on platter. Garnish with basil leaves.
Mix remaining olive oil and vinegar together. Drizzle over salad. Add salt and pepper. Serve immediately.
