Say goodbye to boring Tomato Soup. Our recipe is a must-try. Perfect for a comforting lunch or dinner. Indulge and enjoy!
1 8-oz. Block Feta Cheese (saved a pieces to garnish your soup)
4 cloves garlic, whole
2 pints grape or cherry tomatoes
3 teaspoons divided, Tuscan Bread Dipper Herb Mix
¼ cup (plus a little extra) Basil Olive Oil
1 medium yellow onion, chopped
salt and pepper to Taste
1 can (28 oz.) crushed tomatoes or puree tomatoes
4 cups vegetable or chicken broth
1 tablespoon fresh Basil, chopped (plus extra for garnish)
Preheat oven to 400 degrees.
In an oven safe dish, place tomatoes. Toss the tomatoes and garlic with olive oil then add 1 tsp. of the Tuscan Bread Dipper and toss again. Place block of feta cheese in center. Flip the cheese a few times to ensure it is coated with oil and herb mixture.
Bake for 35 to 40 minutes until tomatoes have burst and garlic is soft.
In a large saucepan, heat olive oil over medium. Add onion and cook until translucent. Add 2 tsp. Tuscan Bread Dipper.
Add the tomatoes, broth, and basil herb. Cook over low heat until feta and tomatoes are done.
Once done add the feta and tomatoes to the pan but not the garlic.
Add to a blender, the garlic and 2/3 of the soup mixture. Blend and then return to pan.
Bring the soup to simmer.
Serve with a drizzle of Basil Olive Oil, feta crumbles and chopped Basil (optional). Enjoy!
