Brush bread on both sides with olive oil and sprinkle with salt
Bake for 5 to 10 minutes until crisp
Remove from oven and allow to cool
Shrimp and Avocado topping
Toss shrimp with 1 Tbsp. of olive oil, salt, and pepper. Preheat large skillet. with 1 Tbsp. of olive oil. Add the shrimp and sauté until just cooked. Allow shrimp to cool then chopped in thirds. Transfer to bowl.
Add 1 Tbsp. olive oil, shallots, and lime juice to bowl with shrimp. Toss and add more salt and pepper to taste.
Smear crostini with avocado, then spoon on shrimp. Garnish with Cilantro and serve.
