2-3 cups baby arugula
1 large pineapple cut into chunks
1 large English cucumber, chopped
1 medium red onion, thinly sliced
1 medium avocado, chopped
1 red bell pepper, diced
1 cup cooked shrimp
½ bunch cilantro, chopped
salt and pepper for taste
3 tablespoons Tahitian Lime Olive Oil
3 tablespoons Coconut Mango White Balsamic Vinegar)
salt and pepper to taste
Whisk the olive oil and vinegar. Season with salt and pepper.
Mix all ingredients together in a large bowl. Drizzle the dressing over the ingredients and toss gently.
