5 cups Arugula
1 ½ to 2 cups, cooked and peeled shrimp
1 large Mango, cut in small pieces
½ cup red onion, sliced
½ cup tomatoes, cut in small pieces
1 large avocado, cubed
2 tablespoons Cilantro, chopped
4 tablespoons Tahitian Lime Olive Oil
4 tablespoons Pink Grapefruit White Balsamic Vinegar
Salt and Pepper for taste
Sliced Lime Wedges for garnish
Combine all ingredients in a large bowl except of olive oil, vinegar, and lime wedges
In a small bowl, whisk together olive oil and vinegar, add salt and pepper to taste.
Toss salad with dressing. Serve with lime wedges.
