This Avocado Spinach Salad with Rosemary Bourbon Dressing is fresh, green, and ready in minutes—perfect timing for St. Patrick's Day (or, you know, literally any day you want something delicious and easy). Because let's face it, good salads shouldn't be complicated.

This salad is picture perfect and tasted so good.
10 to 12 ounces baby spinach, washed and dried
2 medium ripe Hass avocado, sliced or cubed
3 slices bacon, cooked until crisp and chopped
3 eggs, cooked as you desire, and quartered
Salt and Pepper to taste
6 tablespoons Rosemary Olive Oil
3 tablespoons Bourbon White Balsamic Dressing
Salt and Pepper to taste
Whisk the olive oil and vinegar together.
In a large bowl add spinach. Toss the spinach with the dressing.
Add the avocado, bacon, and egg to the salad. Drizzle with additional olive oil and a pinch of salt and pepper if desired. Serve immediately.
