Sharie's Potato Salad
- 8 medium potatoes, cooked, cold, peeled, and cubed
- 2 eggs, hard-boiled, shelled and chopped
- 1/2 cup celery, chopped
- 1/4 cup sweet pickle relish
- salt & pepper to taste
- 1 medium onion chopped
- 1/2 cup sugar ( I use honey at times)
- 1 tsp. salt
- 1/2 tsp. pepper
- 4 Tsp. mayonnaise
- 1 tsp. celery seed
- 2 tsp. prepared mustard
- 1/3 cup Marc De Champagne Vinegar
- 2/3 cup Tuscan Herb EVOO
- Combine in a blender for 3 minutes.
- Combine ingredients then add the dressing.
- Refrigerate for 1 hour.
- Garnish with chives, sliced eggs, or fresh herbs!
