Ingredients 8 medium potatoes, cooked, cold, peeled, and cubed 2 eggs, hard-boiled, shelled and chopped 1/2 cup celery, chopped 1/4 cup sweet pickle relish salt & pepper to taste Dressing- 1 medium onion chopped 1/2 cup sugar ( I use honey at times) 1 tsp. salt 1/2 tsp. pepper 4 Tsp. mayonnaise 1 tsp. celery seed 2 tsp. prepared mustard 1/3 cup Marc De Champagne Vinegar 2/3 cup Tuscan Herb EVOO Combine in a blender for 3 minutes. Directions- Combine ingredients then add the dressing. Refrigerate for 1 hour. Garnish with chives, sliced eggs, or fresh herbs!
