Imagine this: a table set for a family gathering, laughter filling the room, and at the heart of it all, a bowl of our beloved Spugnole Pasta with Peas, Asparagus, and Pesto. This dish is more than just a meal for us - it's a cherished family favorite.

There's something incredibly comforting about a home-cooked pasta dish, don't you think? This meal has brought smiles to our family gatherings for as long as I can remember. Perfect served warm or cold!
1 lb. Spugnole Pasta
1 jar Pesto alla Genovese
4 to 6 Tbsps. Pesto or Meyer Lemon Olive Oil
2 cups Frozen or fresh peas
1 bunch of Asparagus, wash, woody end snapped off and cut into small bite size pieces
2/3 cup or more Parmesan cheese, shaved
2/3 cup or more Pine nuts, toasted
salt and pepper for taste
Prep your asparagus. Heat 2 Tbsps. olive oil in a large pan over medium heat. Add asparagus, season with salt and pepper. Cook until tender and bright green about 3 minutes. Stir in peas. Cook until peas are bright green about 2 minutes. Remove from heat.
Prepare pasta as directed however cook the pasta for 2 minutes less as directed by package. Before draining pasta, save 1 cup of pasta water. Drain pasta.
Empty jar of pesto in a bowl. Add 3 Tbsps. of Pesto Olive Oil. Stir to combine.
In a large pot, add pasta, pesto, peas, and asparagus. Add pasta water if needed. Heat pasta to warm and is completely coated with pesto.
Transfer to a large serving bowl. Top with freshly ground pepper and salt. Drizzle with olive oil. Add shaved parmesan cheese and serve.

My husband and I love the Pesto alla Genovese and Spugnole pasta we have purchased from Olive & Basket and have used these ingredients in various ways. Recently, I saw the recipe on their website for SPUGNOLE PASTA WITH PEAS, ASPARAGUS and PESTO. It really appealed to us. One part of the recipe calls for either 4-6 Tbsps. of Pesto or Meyer Lemon olive oil. We decided to order up the Meyer Lemon olive oil and we were so pleased with the result. We made this recipe last night and were thrilled. The Meyer Lemon olive oil added a nice bright finish to the dish. This recipe is also a healthy and quick meal to make. It is in our “must” repeat file. I’ll be scanning all their recipes going forward.
