
Basil Extra Virgin Olive Oil Marinade
Marinating poultry and fish with this basic marinade gives them an excellent flavor without masking their delicate flavors. It can also be used to marinate vegetables before roasting or grilling.
Ingredients
- 1/2 cup Basil Extra Virgin Olive Oil
- 1 1/2 tsp. Garlic, finely chopped
- 1/2 Small Yellow onion, chopped
- 2 Tbsps. Fresh tarragon or 2 tsp. of dried tarragon, chopped
- White Balsamic Vinegar or Marc de Champagne Vinegar
Directions
- Put all ingredients in a food processor or blender and process for 20 seconds.
- Place poultry or fish in a nonreactive dish and pour marinade over it. Cover, refrigerate, and let marinate depending on the size of what is being cooked. (For fish fillets 15 mins or 3 hours chicken pieces)
- When ready to cook remove from marinade and cook to desired doneness.
- Discard marinade.
